Why is "age discrimination" technically illegal in hiring, and how we do it anyway?

I do not I have nothing against older people, but no form of health insurance company can plan my process more than two of them to time. Taking into account the financial realities of business, why is unlawful age discrimination and how they do it anyway, as an employer, without getting caught or getting into trouble? I do not want to hire people of 50 or more, unless one of our retired employees first. Look, I hire them if we had national health care, but This is America, and we do not.

You Sholder consult a lawyer, but there are many places where I've never seen a single person of old work. Large chains, so there must be some way out.
